“One of the best tables on the island, without a doubt.” “A restaurant to visit as fast as possible,” “Passionate about his art.” L’Esprit is definitely one of the culinary experiences most highly acclaimed by visitors to the island. It goes without saying that this restaurant in Saline owes it success to the talent of its chef, Jean-Claude Dufour, who after running the kitchen at Eden Rock for more than 10 years, set off on his own culinary adventure five years ago.
He selected a setting that fits his personal style, casual and open-air, close to the most beautiful beach on the island, with décor that is both intimate and welcoming in the heart of a tropical garden, where the stars twinkle brightly over the tables.
For Jean-Claude Dufour, cuisine is above all a sense of discovery, a perpetual research into the flavors he reinvents every evening, following his inspriration. He meticulously seasons every dish and carefully oversees the presentation of every plate.
Once again this year, his menus are very enticing, featuring a mix of classics and new recipes, which keep you coming back again and again. The duck spring rolls, the salad of white cabbage and mango, or the seared foie gras to start, followed by such specialties as roast pigeon, chestnut-artichoke tortellini, or braised veal with ravioli, and butternut blinis. The menu also places an accent on seafood with lobster ravioli, roast scallops with coppa, or turbot steaks.
