La Langouste, an Island Institution Overlooking the Bay
Since 1984, Annie and Jean-Pierre Ange have welcomed guests to their property in Flamands, home to both the Baie des Anges hotel and La Langouste restaurant. More than forty years after opening, this family-run destination continues to celebrate French cuisine with Creole influences in a peaceful waterfront setting.
A Family Story Spanning More Than Forty Years
When Annie and Jean-Pierre Ange settled on Flamands Bay in 1984, St. Barts still possessed the confidential atmosphere of a largely preserved island. Their establishment developed within this natural environment, close to a long stretch of white sand considered one of the island’s most beautiful beaches.
Over the years, the hotel and restaurant created a shared identity built around hospitality, simplicity, and consistency. La Langouste gradually became a familiar destination for residents, returning visitors, and travelers searching for a quieter dining experience in St. Barts.
Far removed from fleeting trends, the restaurant has always focused on longevity. Several generations of guests return to rediscover its familiar atmosphere, soothing view, and recipes that have become inseparable from the location.
A Restaurant Within Baie des Anges
La Langouste is part of Baie des Anges, a family-owned hotel set within an enchanting natural environment. The proximity of the suites, swimming pool, restaurant, and beach creates the welcoming feeling of a Caribbean vacation home.
The setting remains warm and understated. Flamands Bay provides a beautiful backdrop from the tables, while the pool enhances the overall sense of calm and escape.
The restaurant welcomes hotel guests as well as outside visitors. At lunchtime, the bright Caribbean light accompanies fresh and generous cuisine. In the evening, the atmosphere becomes more intimate, making it an inviting choice for couples, families, and groups of friends.
Fresh Caribbean Spiny Lobster as the Signature
The restaurant’s specialty is naturally its fresh Caribbean spiny lobster. Guests are invited to choose their lobster directly from the restaurant’s large live tank before it is prepared.
The lobster is then grilled to order to preserve its delicate texture and natural flavor. It is served with three sauces created by Chef Michel, which have become one of the restaurant’s defining signatures over the years.
This ritual, from selecting the lobster to its arrival at the table, places the product at the center of the experience. The preparation remains intentionally simple, allowing the freshness and quality of the lobster to speak for themselves.
French Cuisine With Creole Influences
Beyond its signature specialty, the menu brings together French culinary tradition and Caribbean flavors. Dover sole meunière, sea bass, ceviche, tataki, and locally caught fish showcase several interpretations of seafood cuisine.
Depending on availability, tuna, sea bream, and local fish are prepared in ways that preserve their freshness. Accras, stuffed crab, and other island-inspired dishes reinforce the restaurant’s Caribbean identity.
Meat lovers also have several options, including lamb shank, chicken skewers, beef tenderloin, and veal chops. This variety makes it easy to satisfy different preferences around the same table.
Remaining True to the Spirit of Flamands
What distinguishes La Langouste extends beyond its signature dish. The restaurant also owes its longevity to a personal, attentive, and genuinely family-oriented approach to hospitality.
Since 1984, it has evolved alongside St. Barts without losing its identity. La Langouste retains the charm of an independent establishment where guests return for the cuisine, the setting, and the memories associated with the location.
Overlooking Flamands Bay, the restaurant embodies a living part of the island’s hospitality and culinary history—an understated institution where the sea, family, and tradition come together around the same table.
