Chosen for its intense green fruit notes, freshness, and naturally high polyphenol content, the oil is early harvested and cold extracted to preserve its purity. Through a natural spherification process using plant-based alginate and calcium, a delicate membrane forms around the oil without altering its flavor or nutritional qualities.
