Bonito offers French Pan-American cuisine, a combination mastered faultlessly by chef/owner Laurent Cantineaux known for his innovative cuisine crafted with French techniques and his experience in the Americas for over 20 years. The concept provides open kitchen action with an exclusive ceviche bar that adds an upbeat dynamic to the ambiance and brings forward freshness and authenticity. Bonito also offers delicious meats cooked to perfection on a charcoal grill, a wide range of salads and delicious desserts to end your visit. The gourmet cuisine and an embracing atmosphere make you feel like you are visiting friends who you like to see often. The Chef: Laurent Cantineaux, a Paris native, is known for his innovative cuisine crafted with French techniques, and his experience in the Americas for over 20 years. He started his career in France, where he worked for unparalleled Michelin-starred restaurants like Guy Savoy and Troigros. Laurent’s trajectory then took him to New York City, where he worked for Daniel Boulud in his iconic restaurant Daniel’s. Traveling was essential for Laurent, landing him in Venezuela, where he shaped the gastronomy scene and opened his first and emblematic restaurant Cafe Atlantique, followed by his other successes, Bonito in St Barth and finally Betula in Aspen. His global background was a necessary journey for the mastering of his current craft.
