Laurent’s trajectory then took him to New York City, where he worked for Daniel Boulud in his iconic restaurant Daniel’s. Traveling was essential for Laurent, landing him in Venezuela, where he shaped the gastronomy scene and opened his first and emblematic restaurant Cafe Atlantique, followed by his other successes, Bonito in St Barth and finally Betula in Aspen. His global background was a necessary journey for the mastering of his current craft.
