On the menu, the abundance of the Caribbean is in the spotlight with an array of delicious flavors. Fish caught through sustainable practices are served raw.
Island spices add zest to meats, while vegetables are carefully paired with herbs cultivated in Saint Barthélemy. Regional fruit and cacao are at the heart of the dessert list.
