AMNIOS embodies a sincere and friendly vision of gastronomy in Saint Barth. Facing the lagoon of Grand Cul-de-Sac, the restaurant celebrates above all the art of hospitality and the pleasure of sharing, with cuisine inspired by the sea, the seasons, and the local market.

The dishes are prepared daily using fresh produce sourced from local fisheries and, in part, from the restaurant's own vegetable garden, guaranteeing freshness, authenticity, and respect for seasonality. The menu changes according to availability and is accompanied by a carefully selected wine list.

At lunchtime, Amnios offers light, fresh, and inventive cuisine, ideal for a simple and elegant meal

overlooking the water.

In the evening, enjoy a more intimate experience with a convivial table d'hôte: a surprise menu created by the chefs, designed as a moment of discovery and sharing.

Committed to an eco-responsible approach, Amnios works with local fishermen who respect the island's ecosystem and implements systematic waste sorting.

The venue is also available for private hire, for tailor-made lunches or dinners in a natural and peaceful setting.
