Maya’s concept is to change the menu daily, use the freshest products available, and keep things simple and clean. There are five or six appetizers daily; usually soup, three salads, ceviche, and fish tartar or carpaccio. Main courses include two fresh fish, often local mahi-mahi, wahoo, red snapper or yellow fin tuna, sometimes imported salmon, turbot or sole, plus shrimp, local langouste, calamari, chicken, and beef or lamb. All main courses are served with vegetables. Desserts are constant: Maya’s chocolate cake, orange cake and coconut tart; homemade sorbets and ice creams.
